Italian cheese history
The history of Italian cheese started with the Roman Empire which adopted the process of making cheese into a fine art. They separated kitchens solely for making cheese, and so called cheese centers where people could bring cheese to get it smoked. As the Roman Empire spread through Europe, the secrets of making cheese spread along the countries which Romans occupied. After the decline of the empire, the old cheese making regions became isolated, and developed their own unique types of Italian cheese. In the dark ages innovation was very little. While monks kept the tradition alive through the middle ages, cheese became less popular with the idea that it was unhealthy. The change arrives in the early 19th century. Due to the industrialization interest in cheese rose again and factories began to produce it. The pasteurization in which the milk is sterilized helped to popularize and transport cheese to farther distances. Until the 20th century, cheese had always been considered a unique food. Due to the ability that it can be mass-produced, cheese has became a staple of most diets.
